Our oenologists' opinion
Light straw yellow colour with pale green highlights, clear and brilliant; open nose with notes of sea spray, salt stone and flint, hint of hawthorn; fairly vanilla attack, small body, small character on almond milk, vanilla, flinty notes, fairly thin, sapid finish, lacks pizzazz and freshness. Rather short finish. Open 30 minutes before serving.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

coopérative la Chablisienne
Created in 1923, the Chablisienne cooperative covers, today, 25% of the Chablis vineyard with more than 300 wine gorwers. Terroir: Extending over 1175 hectares, the Chablisienne vineyards sit on kimmeridgian soils with an alternation of marl and marl-limestone with desposits of small oyster shells. The plots are entirely exposed to the south east, south and south west with a mosaic of different climates. Viticulture: The cooperative has the particularity of harvesting the harvest in the form of musts in order to immediately evaluate the quality of the different plots.
