Our oenologists' opinion

Fruity and well-rounded

Dark garnet colour with brick tints, clear and brilliant. Open nose, with notes of black pepper and fireplace, smoke, acidity, freshness and finesse. Supple and vinous attack, beautiful finesse, tension, fullness, terroir character, more discreet oak, velvety tannins. Crisp, acidic and complex finish, medium persistence on red berries.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Vinification: Manual harvest of the grapes at full maturity. Traditional maceration in concrete vats at 28 ° C with gentle extraction methods: regular pumping over with the use of a marc sprinkler and shedding at the start of maceration. Keeping the vats at 30 ° C in post-fermentation maceration for several days.

    Regular tasting .
Aging: For 10% in vats; the rest in wood (25% in 400L barrels and 65% in 228L Burgundy pieces) of different ages: new (30%), 1 (30%), 2 (6%) and 3 wines (24%)
