Fruity and crisp
Coral colour with some light and shiny salmon reflections, frank nose of cranberries, notes of stones and fresh mint with hints of white pepper, nice balance on a frank wine, with a small finesse and freshness, the character is quite signes with small red fruits, notes of pemegranate, dill and a nice frank and straightforward length.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.
Domain and appellation
Under a mediterranean climate, the Pinot Noir is a precocious grape variety which easily attains its ripeness for refined rosés. The territory of Aude, backing onto Montagne Noire, brings freshness, maturity and balance to its wine. This cuvée is the result of a selection of the best plots from a certified Terra Vitis partner house. Maison Castel observes, analyses and tastes the berries regularly to follow their ripening and determine the optimum date for harvesting.
