Our oenologists' opinion

Fruity and crisp

Greed and freshness compose the nose of this dark ruby-colored wine recalling violet, wisteria, black fruits and bell pepper. In the mouth, its winey and full-bodied taste allies to its plump side in a good balance. Its finesse matches with ripped, smooth and round tannins. The greed of the nose is to be found again during the length that demonstrates a great frankness.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Do you know ?

Biodynamic viticulture is based on the research of the balance of the vines with its immediate and more distant environment. This method appeared in 1924, under the influence of Rudolf Steiner, an Austrian philosopher and agronomist.

Domain and appellation

  • Domaine des Roches Neuves

Thierry Germain who has owned the domain since 1992 converted the 14 hectare vineyard into an organic and biodynamic agriculture. Nowadays, the domain extends over 28 hectares cultivating the chenin and cabernet franc grape varieties.

    • Wine-making: A fermentation in wood barrels with light remontages precedes a maceration lasting for 22 to 24 days. A malolactic fermentation in wood barrels follows. Finally, the wine ages in barrels of two or three wines but also in oval casks for 18 to 24 months.
