Our oenologists' opinion
Fruity and well-rounded
Purple colour with ruby reflections. A frank, fruity nose of fresh blackcurrant and morello cherries. Notes of fresh spices. Supple attack, on red fruits, frank and greedy lengthening. Notes of redcurrant and blackberry. A frank, fruity and persistent finish.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.
Domain and appellation
The vineyard is located in the south-western part of the southern Ardèche, on the edge of the Cévennes with its particular microclimate. It is planted on the "faÿsses", the famous Cevennes terraces, built at an altitude of 300 metres, on acid sandstone soils. The climate is Mediterranean. The vinification is done according to the "Beaujolais technique" in carbonic maceration. The vatting period is short, 5 to 6 days, and is followed by fermentation at 18°C.
