Fruity and well-rounded

Purple colour with ruby highlights. Straightforward nose of morello cherries and kirsch. Opens with aromas of leather and fresh spices. Frank character. Fleshy attack with a well-balanced envelope. Lengthens with candied red fruit and blackcurrant coulis. Good persistent tension. Nice character.

Features

Domain and appellation

  • CAVE OLIVIER CYROT

    The Olivier Cyrot-Buthiau estate has been established for four generations in Pommard, in the heart of the Côte de Beaune. Founded at the beginning of the 20th century by Paul-Joseph Cyrot, who was steward of Château de Pommard and Clos de Tart, it was gradually expanded by his son André and grandson Jean-Marc. Terroir : At the top of the hillside, a very chalky soil. Then white argovian limestone down the slope, light and chalky in appearance. Further down, the Bathonian limestone is stony, ferruginous and reddish. Vinification: The grapes are harvested by hand, then 100% destemmed and crushed. - Vatting time: 15 to 18 days - Aged in barrels (Vosges & Allier) for 14 to 15 months, 20 to 30% new barrels.
