Château de Fouilloux
Château de Fouilloux has belonged to the Pasquier-Desvignes family since 1420, and since 2009 Julien Gerin has been working the vines to produce a unique wine every year. Covering an area of around 3.10 hectares in the commune of Cercié, this estate is set on a gently sloping plateau with a full southern exposure and benefits from plenty of sunshine. The clay-granitic soil is particularly good, producing wines that are both fine and fruity. The vines, which are over 60 years old, produce grapes of the highest quality, thanks to the intense exposure to the sun from which the plots benefit. The vines, trained in a goblet shape, are cultivated using integrated farming methods, with the constant aim of keeping inputs and soil improvers under strict control. The grapes are harvested by hand and sorted by plot. Traditional, long, semi-carbonic fermentation in stainless steel vats for 9 to 11 days, with temperature control.
