Our oenologists' opinion
Its straw color with green highlights offers a pretty finely wooded nose of hazelnut, vanilla and dried apricot. On the palate, this wine is balanced, full-bodied and strong with character and a tight finish on a mineral touch.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation
Located close to Carcassonne and built by the Languedoc State Treasurer, Bernard de Pennautier, the Château de Pennautier is today classified as an historic monument.
- Terroir: Spread across 146 hectares, the vineyard is perched high at 200/400 meters of altitude on sunny side hills and limestone-clay soils.
- Viticulture: Selective harvest in the early hours of the day.
- Vinification: A cold settling precedes an alcoholic fermentation of 3 weeks, followed by malolactic fermentation in barrels with regular stirring. The wine is then aged for 10 months in French oak barrels (50%) and tanks (50%) with regular stirring.
- Chardonnay : 100%
