Fruity and well-rounded

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • Domaine de Cibadiès

    The Domain of Cibadiès extends on 95 hectares ideally exposed between the sea and the garrigue, in the city of Capestang in the Hérault department. It is located between the Midi Canal, designated as a Unesco World Heritage Site, and the Oppidum d’Ensérune, an archeologic site composed of the remains of Ancient village.

     

    • Terroir: The alternating of winds and rains with an intense sun constitutes a real meso-climate. The terroir is in majority made of clay and limestone. The vineyard is composed of hills and terraces that give fresh, round and harmonious wines. The Chardonnay, coming out on 50 hectares, reveals here its extraordinary potential. The yields of the domain are controlled to produce only high-quality wines, aromatic and concentrated.
       
    • Wine-making: The Chardonnay, harvested in over-ripeness, is subjected to a skin maceration of 6 to 12 hours before being pressed in an automatic pressing. Then it ages on dregs to strengthen its aromatic complexity and its smoothness.
