Fruity and well-rounded
Garnet colour with ruby glints. A frank nose of fresh spices on the garrigue. Opens on woody, vanilla notes. Supple attack, medium body compared to the bulk. Lingers on candied black fruit. Average persistence.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

CHÂTEAU TOUR DE RISSAC
The castle is located north-west of Carcassonne and spreads over nearly 70 hectares. The vineyard is characterised by medium draining slopes with a south-east exposure, which allows a progressive sunshine in the morning. Soil: Ventenac limestone offering a very good water supply during the summer period.
Vinification: Partially hand-picked green grapes (one in July, one in August), fermentation under temperature control, regular punching of the cap. Ageing of 60% in stainless steel vats for 6 months and 40% in French oak barrels.
