Our oenologists' opinion
Clear straw yellow colour with a bright yellow reflection, limpid and brilliant. Open nose with hints of vanilla, grey pepper and roasted almond, hints of aniseed. Round attack, greedy, beautiful envelope, tension, full, beautiful finesse, the woodiness is fine and delicate, well balanced; sapid finish on roasted hazelnut, almonds and salted butter.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Wine-Making: pre-fermentation maceration for a few hours, extraction of the juice by crushing, draining and pressing, clarification of the juice by settling, alcoholic fermentation at low temperature (18 to 20°C), malolactic fermentation.
Maturing: maturing on the lees with regular stirring for 3 months to add fat and volume in the mouth.
