Our oenologists' opinion

Powerful bouquet

The intense, bewitching nose opens with sweet spices, roasted mocha and full-bodied dark chocolate.

The attack is supple and well-balanced, marked by smooth, silky tannins.

The palate is an extension of the nose, with a fluid, easy texture that reveals a delicious, savoury suppleness.

Persistence is moderate but harmonious, giving way to a round, caressing finish with hints of chocolate.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

2021, a vintage of patience and precision!

A winter marked by alternating cool and mild periods.

In April, a historic frost episode significantly reduces the harvest.

A very rainy spring, followed by a slow-starting summer that remains relatively cool overall.

At the end of September, a rainy spell prompts us to harvest the Merlot, followed by bright sunshine, allowing the Cabernet Sauvignon to reach optimal ripeness.
