Oscillating between tradition and modernity, the Gevrey Chambertin Vieilles Vignes 2012 domain thrives by preserving its terroir typicity.
- Viticulture: In the vineyard, the implementation of sustainable agriculture is favored and the vines taken care of all year long. A green harvest occurs in July in order to lighten and alleviate the vines. The harvests are hand-picked and sorted out thanks to the use of a high tech LEDs and vibrating table.
- Vinification: In the cellar, the winemaking approach intends to let the wines speak for themselves. An intracellular maceration replaces the grapes’ crushing process prior to a process-free fermentation, press, ageing, and finishing phases.
