Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • DOMAINE MILLET

    Philippe Millet, a young Beauceron farmer, settled in Tonnerre in the mid-1960s. In the early 1980s, he established the winery as some of the lands he cultivated for cereals were eligible for AOC Petit Chablis.

     

    He planted 9 hectares of Petit Chablis and later acquired vines in AOC Chablis and AOC Chablis 1er Cru Vaucoupin.

     

    In addition to producing fine grapes, he decided to vinify and market them. Now retired, his son, Baudouin Millet, manages and continues to expand the vineyard.

    • Winemaking: Traditional winemaking on fine lees in temperature-controlled stainless steel tanks. Mechanical harvesting.
