Our oenologists' opinion

Pale yellow colour with very pale straw tints, clear and brilliant; open nose with notes of hawthorn, acacia, honeysuckle and lemon blossom, airy; supple attack, tension, freshness, nice character with candied lemon and white flowers; sapid, full-bodied finish, nice tension, nice minerality, medium persistence with white flowers and iodine notes, full-bodied

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Do you know ?

In 1936, the Cassis vineyard made history. It obtained its classification as an Appellation d'Origine Contrôlée, AOC, at the same time as these three letters were officially created. Cassis is thus the first vineyard in France to have received this distinction.

Domain and appellation

Three centuries of history for this estate which, since 1714, has remained the heritage of the same family, currently under the leadership of François Paret, his daughter Jérômine and the oenologist Philippe Garnier.

    •     Terroir: The estate extends over 30 hectares of hillsides facing the sea, opposite the bay of Cassis on a clay-limestone soil, even very chalky. The Mediterranean climate here offers particularly mild temperatures all year round, little rain, but sea mists that maintain an ideal hygrometry for the vines. Since 2012, the Cassis vineyard has been part of the Parc National des Calanques. It is the only one in France to be entirely included in the territory of a national park.
    •     Viticulture: Working for a long time with great respect to the environment, the estate has formalised its working methods via the organic label.
    •     Vinification: The grapes are harvested by hand in small crates and carefully sorted. All of these upstream attentions were coupled in 2014 with a renovation of the cellars and its vat room equipped with an exact control of temperatures.
