Our oenologists' opinion

Fruity and well-rounded

Light pink colour with a rose gold sheen. Clear nose, with aromatic and fresh spices.  Opens quickly on red fruits.  Full-bodied attack, full-bodied, frank length on citrus fruits, spices. Grapefruit notes. Nice character. Persistent and greedy finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Do you know ?

In 1936, the vineyard of Cassis obtained its classification in Appellation d'Origine Contrôlée, AOC, at the same time as these three letters were officially born. Cassis is thus the first vineyard in France to have received this distinction.

Domain and appellation

  • Domaine de la Ferme Blanche

Three centuries of history for this estate which, since 1714, has remained the heritage of the same family, currently under the leadership of François Paret, his daughter Jérômine and the oenologist Philippe Garnier. Terroir: The estate extends over 30 hectares of hillsides facing the sea, opposite the bay of Cassis on a clay-limestone soil. The Mediterranean climate here offers particularly mild temperatures all year round, little rain, but sea mists which maintain an ideal hygrometry for the vines. Viticulture: Working for a long time in respect of the environment, the estate has formalised its working methods via the organic Vinification label: The grapes are harvested by hand in small crates with a scrupulous sorting. All of these upstream attentions were coupled in 2014 with a renovation of the cellars and its vat room equipped with an exact temperature control.
