Our oenologists' opinion
Powerful bouquet
The nose is open and elegant, blending crisp red fruits, redcurrant and raspberry, with beautiful freshness and remarkable aromatic finesse, carried by a discreet but seductive complexity.
On the palate, the fleshy attack reveals creamy bubbles and a generous, refined texture.
The character is expressed through brandied plum, mirabelle plum and a delicious raspberry coulis, perfectly balanced.
The finish is powerful, complex and delicious, marked by a beautiful persistence of red fruits, sweet spices and a chalky imprint that prolongs the freshness and anchors the wine in its terroir.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

LOUIS VALLON
Legend has it that during the Hundred Years’ War, an abbot tended to his vines by moonlight, when the battles ceased.
One evening, he rescued a wounded English soldier, and during his recovery, introduced him to his sparkling homemade wine, crafted “when the valley glows”.
Moved by these first French words the Englishman ever uttered — “le vallon luit” — the abbot named his creation Luit Vallon.
Over time, the name evolved and was passed down through generations, eventually becoming Louis Vallon — a name rich in history and tradition. -
