Bright partridge eye colour. Straightforward nose which goes towards spices and loses pomelos and citrus notes, but gains on notes of fresh thyme. Good balance with a little freshness, notes of redcurrants, sweetness, we find a little bit of the 360 with its greedy side but which goes towards spices.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation
Property of the Maison Castel since 2000, the Château Cavalier is located between the cities of Aix-en-Provence and Nice, in the Var region and produces high-quality rosé wines.
- Terroir: Spread over 132 hectares, the vines evolve on sandy and limestone soils, made of sandstone and clay soils, helping the drainage. Each hectare has 5 500 plants.
- Viticulture: The harvest are done overnight, at the freshest hours, in order to avoid oxidation.
- Wine-making: Each grape variety is vinified separately in thermos-regulated tanks. The cinsault is vinified at low temperatures and very low turbidity to multiply its aromas. The grenache is subjected to a skin maceration (between 4 and 8 hours). A classical fermentation takes place between 14 and 18 ° C depending on the grape variety. The wine ages in stainless steel tanks during 2 to 3 months.
