Our oenologists' opinion
Its dark brick color introduces a nose of candied fruits with spicy notes of cumin and old leather. The palate is balanced, bold, coated and characterized. The lingering finish offers notes of licorice.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation
Domaine Prieuré de Saint-Jean de Bébian
Marked by the ancestral dynamism of Pézenas, the Prieuré Saint Jean de Bébian domain keeps on taking the high road through its unique terroirs and grands vins.
- Terroir: Spread across 32 hectares with the Cévennes for hinterland, the white varietals’ vines lay on limestone soils that one can compare to some of the finest Burgundy and Champagne terroirs with a tenor of limestone as high as 30%. The red varietals’ vines lay on arid and stony limestone soils.
- Viticulture: The vineyard was entirely renovated in the 60’s with the addition of Rhône varietals (GSM) to some of the traditional mediterranean varietals (carignan and cinsault). The vines are in average 35 years old and the harvests handpicked.
- Vinification: The wines are vinified plot-by-plot in cement tanks and stone tanks that date back to the 18th century. The 4 to 6 weeks maceration is followed by a 2 years maturation phase in french oak barrels for the syrah and cinsault and stainless steel tanks for the garnacha.
