Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • CHÂTEAU OLIVIER

From the knights of the Hundred Years’ War to the philosophers of the Enlightenment, this ancient seigneury has long been home to men of great character.

A true living vestige of history, Château Olivier has been classified as a Grand Cru since 1953.

Terroir: Covering 60 hectares, the vineyard rests on gravel soils with a clay-limestone subsoil, endowing the wines with depth and balance.

Viticulture: The vines, averaging 20 years for reds and 30 years for whites, are trained using simple and double Guyot pruning.
Harvesting is done by hand, in small crates, with selective sorting both in the vineyard and at the winery.

Vinification: Alcoholic fermentation lasts 10 to 30 days at 25–30°C in temperature-controlled vats, followed by malolactic fermentation in barrels.

The wine is then aged for 12 months, with one-third in new oak barrels, achieving refinement and aromatic complexity.
