Powerful bouquet

The nose is open and bouqueted, seducing with its complexity and aromatic richness, blending notes of spices, incense, mocha and white chocolate, enhanced by a hint of young leather and dried apricot.

 

The attack is round, generous and full-bodied, marked by tension and richness, with notes of candied yellow fruit, almonds and caramelised peanuts.

 

The finish is rich and mineral, distinguished by its finesse, body and beautiful texture, offering a long persistence of minerality and candied yellow fruit.

 

A harmonious and elegant wine with great aromatic complexity.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • CAVE DE TAIN

    Terroir: Alluvial terraces with loess deposits.
    Climate: Continental with Mediterranean influence.

     

    Vinification: Grapes are sourced from a very old parcel (around 80 years old), an exceptional heritage of the Cave de Tain.


    The hand-picked grapes are gently pressed upon arrival at the winery.
    The juice is selected and protected from oxidation, followed by cold settling for 24 to 48 hours.


    Fermentation begins in temperature-controlled vats (18–20 °C), before being transferred to barrels for completion.
    A partial malolactic fermentation in oak is carried out on 40% of the volume.

     

    Ageing: In 400 L barrels (45% new, 35% one-year-old, 20% two-year-old) for 8 months on fine lees, with regular stirring (bâtonnage) to enhance roundness and aromatic complexity.
