Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • DOMAINE FAIVELEY

Founded in 1825 in Nuits-Saint-Georges, at the heart of Burgundy’s wine country, Domaine Faiveley owns over 120 hectares of vineyards.
The ambition of Eve Faiveley and Erwan Faiveley, the 7th generation, is to reveal Burgundy’s finest terroirs through a style that combines power, finesse, and elegance.

The grapes are hand-harvested and carefully sorted.
Two daily punch-downs are performed to extract the colour, tannins, and aromas from the grape skins.

After 15 to 19 days of maceration, the alcoholic fermentation completes.
The free-run wine is drawn off by gravity, while the pomace undergoes a slow, gentle pressing to obtain a pure press wine.

The wines are then aged for 12 months in French oak barrels (10% new oak) selected for their fine grain and gentle toasting, in our cellars where both humidity and temperature remain naturally constant.
