Fruity and crisp

The nose is open and frank, aromatic, with notes of pear, white peach, verbena and elderberry, offering a typical character.

 

The attack is marked by a pearly CO2, to be slightly reduced, followed by tension, finesse and a fleshy texture, with a little sweetness.

 

The balance is good, offering good freshness.

 

The finish is straightforward, with lovely freshness and a slight persistence marked by acidity and minerality, with pretty notes of pomelo and lime.

    Mas du Novi – A thousand years of winemaking with a view to the Mediterranean

     

    Since the 11th century, Mas du Novi, a former outbuilding of the Valmagne Abbey, has been producing wine on one of the Languedoc’s finest terroirs, set at 150 metres altitude, on the last slopes of the Cévennes, overlooking the Mediterranean Sea.

     

    Today, this estate covers 50 hectares of organically farmed vineyards, nestled among 50 hectares of woodland and garrigue, and stands as a benchmark for both Languedoc Grès de Montpellier AOP and IGP Oc.

     

    The Story

    Once upon a time… Abbot Foulques, of the Abbey of Ardorel (Tarn), founded Valmagne Abbey in 1139 on lands granted by the Lord of Cabrières, vassal of Raymond Trencavel, Viscount of Béziers.

     


    Mas du Novi was one of the abbey’s wine-growing granges, perched on the surrounding hills with breathtaking views of the coast.

     

    The earliest records mention this activity, but Roman remains found on site suggest that the vine was already cultivated here in ancient times.
