Traditionally, in western France, the best apple cider (or musts) juice were mixed with Calvados to conserve their flavours throughout the year. This operation, called "mutage", practised in secrecy within the family operations and whose expertise was jealously guarded for centuries, gave birth to the Pommeau.

                    Maison familiale MORIN A family business founded in 1889 specialising in the production of "Top-of-the-range" Calvados. The company owes its reputation to a maturing technique unique in Normandy. The young Calvados are first of all housed in small oak barrels in (dry) cellars that are subject to climatic variations before being transferred to very humid underground troglodyte cellars where they will finish maturing. 
 Manufacture: The fruit of a judicious marriage (mutage) of cider apple must and Calvados selected and matured in oak barrels for a minimum of 12 to 14 months. A gentle aperitif!
