Our oenologists' opinion

Fruity and well-rounded

Pale orange colour with copper highlights. Fairly fine, persistent bubbles. Open nose with notes of apple, white pepper and preserved lemon. Creamy, greedy, well-balanced attack, with tension and finesse. Granny apple character. Sappy, crisp, fairly short, clean finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • Domaine Olivier

    The family establishment is nestled in Domfrontais in the heart of Normandy, in the town of La Ferrière aux Etangs.

    • Terroir: The estate is located on a hilly terrain. The soil is predominantly silty-clay-stony. Located on a sandstone bar, the floors are draining.
    • Blend: Sweet bitter apples.
    • Maturing: After pressing, the must is put in tanks ; then alcoholic fermentation, voluntarily slowed down, will last 180 days, where the fruity aromas will be refined.
