Our oenologists' opinion

Fruity and well-rounded

The nose is frank and generous, marked by blackcurrant coulis, violet and fresh peonies, then opens up to notes of herbs.

The attack is supple, offering fullness and a beautiful balance.

The palate stretches out with a frank and generous finish, revealing a lovely racy character with candied black fruits and herbs.

The finish is sustained, elegantly prolonging the aromatic notes.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • GILLES ROBIN

The Papillon cuvée, made from 100% Syrah, reflects a precise and demanding craftsmanship.

The harvest, carried out both by hand and mechanically, is followed by complete destemming and a meticulous berry selection using an optical sorting table, ensuring impeccable quality.

A gentle extraction through pump-overs and punch-downs preserves the purity of the fruit. Eight months of ageing in stainless-steel tanks bring freshness, aromatic brightness and finesse, resulting in a characterful wine that is both refined and expressive.
