Our oenologists' opinion

Powerful bouquet

The nose is frank and open, revealing a spicy, vinous bouquet dominated by notes of menthol, kirsch, undergrowth and bay leaf, with a hint of cherry stone and a delicate touch of cocoa.

 

The palate is balanced and fleshy, offering a beautiful envelope and long, rich tannins.

 

The body is medium, but supported by a pleasant finesse.

 

The finish is sapid and full, marked by medium persistence on aromas of cherry gratin and black pepper, for a distinctive, expressive and racy wine.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

    All our wines have been certified organic by ECOCERT since the 2018 vintage. This label is recognition of my work and my values.

     

    In the vineyard, we have stopped using weedkillers in favour of ploughing and traditional soil cultivation (ridging, de-ridging, inter-row cultivation).

     

    To protect our organically grown vines, we use copper to combat mildew and sulphur to combat powdery mildew.

     

    We take the utmost care of each vine and our grapes are treated with respect.
