    For its Merlot Grande Réserve, Maison Castel has selected the finest plots from the Aude department, in IGP Pays d’Oc.

     

    This region, with its contrasted Mediterranean climate, benefits from cooler nights, allowing for later ripening that brings tension and freshness to the wine.

     

    Maison Castel monitors, analyzes, and tastes the berries almost daily to determine the optimal harvest time.

     

    In the cellar, the same rigorous approach continues: a traditional vinification with slow, gentle extractions is used to achieve a smooth structure and generous roundness.

     

    Ageing then refines the tannins and develops aromatic complexity, revealing the full potential of Merlot.
