Powerful bouquet

Dark brick colour with mahogany highlights. First nose reduced, to be aired, then notes of civet, camphor, fur, hint of dark chocolate. Velvety, supple attack, with well-crafted tannins, fatness and finesse. Character on cocoa and roasted plum, hint of leather. Full-bodied, spicy finish, with coffee liqueur, medium persistence, animal touch.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

    The Prieuré Saint Jean de Bébian has paved the way for the great wines of the region. A mythical estate in the Languedoc, it is unique in its kind thanks to its mosaic of plots. Our grape varieties have been selected from the greatest (Jean Louis Chave, Château Rayas, Domaine Tempier) to be planted on a trilogy of terroirs. If since the Gallo-Roman era, the existence of the estate has had many chapters, we are now beginning to write the most exciting one by taking a major step in our history.

    Separated by grape variety. Slow and long maceration of 6 to 9 weeks depending on the grape variety. Very little pumping over. Pressing by pneumatic press. Malolactic fermentation: In barrels for the Syrah, in vats for the other grape varieties.
