The windmill, surrounded by vines, dates back to the 15th century and is a listed historic monument. It represents the prestige and pride of the appellation. The appellation (640 hectares) straddles two villages, between Burgundy and the Rhône.

SOIL: Vines resting on granite rock

WINEMAKING & AGEING: Manual harvesting. Partially destemmed grapes.

Maceration for about 15 - 20 days, partly in toasted tanks (Punched-down cap). Ageing mostly in tanks and in wood (10%).

FOOD & WINE PAIRINGS: Rabbit rillettes, grilled lamb steaks, pork grills or even Basque chicken.
