Powerful bouquet

The nose is straightforward, marked by notes of mocha, blackcurrant coulis and roasted plum, with a bouquet profile.


The attack is full-bodied, offering a beautiful envelope and good balance.

 

The palate stretches out with a frank and full-bodied finish, dominated by cocoa and roasted plum.

 

The finish is sustained, warm and indulgent.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

    Terroir
    The vineyard is rooted in Miocene limestone and basalt soils within the Pézenas appellation area, giving the wine depth and mineral tension.

     

    Vineyard :
    The vineyard is managed using organic farming methods, with grapes certified biodynamic by Demeter.


    Practices include the use of organic compost, green manure, controlled tillage and exclusively manual harvesting. Yields are naturally low, around 30 hl/ha, ensuring concentration and quality.

     

    Vinification & ageing:
    The grapes are harvested in 12 kg crates and vinified by plot, without crushing. Extraction is deliberately light, carried out mainly by short pumping over, in order to preserve the purity of the fruit and the expression of the terroir.


    Ageing in concrete vats perfects the balance of the wine, preserving its freshness, precision and mineral identity.
