    Pinot Gris thrives in the Pays d’Oc, particularly in the cooler regions of Occitanie.

     

    The influence of the dry, temperate winds from the Atlantic meets that of the warm, humid winds from the Languedoc coast, on soils of marl and molasse, with clay-limestone subsoils, promoting optimal ripeness of the grapes and yielding fine, balanced rosé wines.

     

    A careful selection of plots located in the north-west of the Pays d’Oc is monitored daily by Maison Castel to determine the ideal time for harvesting.
