Our oenologists' opinion

Well-rounded

The nose is frank and distinctive, characterised by woody notes, kirsch, cherry stone and red berries, complemented by aromas of herbs and spices.

The attack is supple and generous, offering lovely roundness and harmonious balance.

On the palate, it displays a frank and expressive character, driven by herbs and spices, with a lingering and elegant finish.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • DOMAINE FAIVELEY

Founded in 1825 in Nuits-Saint-Georges, in the heart of the Burgundy wine region, Domaine Faiveley owns over 120 hectares of vineyards.

Eve Faiveley and Erwan Faiveley, representing the 7th generation, are committed to showcasing Burgundy’s finest terroirs in a style that combines power, finesse and elegance.

The grapes are harvested and sorted by hand. Daily punching down is carried out to extract colour, tannins and aromas from the grape skins. After 19 days of vatting, alcoholic fermentation is complete. The free-run wine is drained by gravity, whilst a slow and gentle pressing of the pomace yields a press wine of great purity.

For 14 months, our wines are aged in French oak barrels (20–30% of which are new) selected for the fineness of their grain and their moderate toasting. The final stage of ageing takes place in vats for two months.
