Our oenologists' opinion

Powerful bouquet

The nose is open and straightforward, expressing intense aromas of black cherry, black pepper, blackcurrant coulis and a hint of eucalyptus.

On the palate, the attack is straightforward and full-bodied, supported by long, rich tannins.

The wine reveals a delicious character, combining caramel, fresh blackberries and a hint of coffee liqueur, in a full-bodied and balanced ensemble.

The full-bodied and straightforward finish lingers on notes of toast, with a beautiful persistence that highlights the richness of the wine.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • CAVE DE TAIN

Terroir: Granitic soil in the north; fluvial-glacial alluvium and terraces of rounded pebbles from the Rhône in the south, punctuated by a few areas of loess.

Climate: Continental with Mediterranean influence, providing temperature range and aromatic concentration.

    Vinification:
The old vines are carefully selected and vinified separately. Only the most remarkable cuvées are selected for the final blend.

After destemming and crushing, vinification takes place in small stainless steel or concrete vats, with precise temperature control (around 28°C) to preserve the fruit's freshness.

The long vatting period of three weeks allows for optimal extraction of aromas and colour, with a gradual increase in temperature (up to 30°C).

Pigeage and remontage are carried out according to tasting, for gentle, tailor-made extraction.
Racking is also determined by tasting, ensuring a perfect balance between structure and elegance.
