Powerful bouquet

Dark garnet colour, black, dense, opaque and brilliant; reductive nose to open then on notes of fur, civet, a touch of toast and a hint of ash; fleshy attack, satiny tannins, body, power, reductive body on mocha, fur and notes of leather, hint of black pepper; spicy, full-bodied finish on bitter cocoa and coffee, good balance, hint of burnt wood.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Domain and appellation

    In 96 AD, the Emperor Domitian had vines uprooted in favour of wheat. It was in the 3rd century that the Emperor Probus had vines replanted in Quercy. It was to pay tribute to him that Jean, the father of Jean-Luc Baldès, created this top-of-the-range Cahors appellation wine in 1976.
