Our oenologists' opinion

Powerful bouquet

The expressive, seductive nose opens with notes of frangipane and candied citrus fruit, enriched by hints of vanilla and brioche, before giving way to a fine minerality.

The full-bodied attack, supported by a fine body but without any heaviness, is ample and silky on the palate, underpinned by tension, balance and a lovely fatness.

The fine, long finish continues on notes of almond and citrus fruit, with a hint of saltiness for good persistence.

A racy, elegant and delicious wine with superb harmony.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • LES VAUX SEREINS

Founded in 1923, La Chablisienne cooperative now covers 25% of the Chablis vineyard area, with over 300 winegrowers.

    Terroir

Spanning 1175 hectares, the La Chablisienne vineyards lie on Kimmeridgian soils, with an alternation of marl and marly limestone containing small oyster fossils.
The plots are generally facing south-east, south, and south-west, forming a mosaic of different microclimates.

    Viticulture

The cooperative has the unique practice of collecting the harvest in the form of musts, in order to immediately assess the quality of the different plots.
