Our oenologists' opinion
Dark brick colour with tiled highlights. Nose of roasting, mocha, leather, notes of burnt wood, good balance, frank, full-bodied, small envelope. Character with notes of roasting, toasting and leather. Good, clean finish with coated, fairly warm tannins.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

CHÂTEAU OLIVIER
From the knights of the Hundred Years' War to the philosophers of the Enlightenment, this ancient seigniory has seen men with very marked characters come and go. The wines of Château Olivier have been classified as Grands Crus since 1953.
Terroir: Spread over 60 hectares, this vineyard lies on a gravelly soil with a clay-limestone subsoil.
Viticulture: The vines are 20 years old (red) and 30 years old (white). They are pruned in single and double Guyot. The grapes are harvested by hand, in small crates with selective sorting of the grapes in the vineyard and then in the cellar.
Vinification: An alcoholic fermentation of 10 to 30 days at 25-30°C in thermo-regulated vats precedes a malolactic fermentation in barrels. The wine is then aged for 12 m
