The Delamain Housepays hommage to its Pale and Dry, created in 1920, by proposing a new interpretation of it: Pale and Dry Centenaire. Developed exclusively using Grande Champagne eaux-de-vie: the Premier Cru of Cognac, Pale and Dry Centenaire is thoroughly blended and slowly reduced with weak eaux-de-vie's, according to the know-how of the house. The Cellar Master chose a smaller reduction to 42%, a longer post-assemblage blending time without any additions, neither wood nor sugar nor caramel. Pale and Dry reveals the most pure representation of the Grand Champagne
