Well-rounded
Light straw-yellow colour with a moon-like reflection, limpid and brilliant. Rather coarse and numerous bubbles. Nose open to buttered bread and white peach, with a hint of apple. Rich and complex attack, fat, beautiful envelope and good tension. Fairly coarse bubbles. Long and persistent finish, with buttery but also tart notes. Beautiful blend of freshness and complexity!

Features

Vinification: This champagne is a majority blend of Pinot Noir and Chardonnay, Grands Crus and Premiers Crus from the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs. Traditional vinification and maturing on fine lees avoiding any premature oxidation. Malolactic fermentation carefully avoided in order to preserve the aromatic complexity of the wine and ensure perfect ageing. Gross dosage at 7g/l to maintain the balance between freshness, fruitiness and vinosity without masking the wine's character and purity. Ageing is a minimum of 3 years on the lees and a minimum of 6 months after disgorging.
