Our oenologists' opinion

Fruity and well-rounded

Get ready to discover new alliances of taste with this ruby-colored wine. It releases fragrances of black fruits, flower and sweet pepper. In mouth, it is well-balanced and full-bodied.  The finish is elegant.

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Do you know ?

Biodynamic viticulture is based on the research of the balance of the vines with his immediate and more distant environment. This method appeared in 1924, under the influence of Rudolf Steiner, an Austrian philosopher and agronomist.

Domain and appellation

  • Domaine des Roches Neuves

Founded in 1850, Domaine des Roches Neuves is located in Varrains. Owned by Philippe Germain, he decided in the 90s to convert the 22-hectare vineyard into biodynamics.

    • Vinification: A fermentation in wood vats over precedes maceration for 22 to 24 days. Malolactic fermentation in wooden vats is then carried out. Finally, the wine is aged in barrels of 2 and 3 wines as well as in oval casks for a period of 18 to 24 months.
