Our oenologists' opinion
Pale yellow colour with pale green reflections, limpid and brilliant. Open nose with hints of menthol, lime and flint, hints of hawthorn and honeysuckle, fresh, airy. Tart, mineral, fresh and frank attack, tension, full. Character on exotic fruits, iodised and floral hints of hawthorn. Beautiful balance, finesse, good persistence.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.
Do you know ?
Made of the Exora virgula fossils, some small comma shaped oysters, Chablis’ subsoil gives the wines a unique character.
Domain and appellation
Created in 1923, the Chablisienne cooperative is comprised today of 300 winegrowers who cover over 25% of the Chablis vineyard.
- Terroir: Spread across 1175 hectares, the cooperative vineyards lay on a clayey soil with an alternation of marl and limestone-marl with small “oysters.” The plots have a South-east and South-west orientation with many different climates.
- Viticulture: Collecting directly the grape musts from the winegrowers, the cooperative can assess in an immediate manner the quality of each plot.
