Fruity and well-rounded
Pale gold colour with pale yellow reflections, limpid and brilliant. Open nose with notes of fresh William pear and hawthorn, frank, typical. Fruity attack, full, nice character on notes of pear and white flowers, hint of iodine. Sapid, frank, fruity finish.
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.
Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Burgundy Aligoté is one of the rare wines to soften salads, tabbouleh or steamed vegetables. It is also a faithful companion for Burgundy gougères, snails and, of course, parsleyed ham.
Domain and appellation
The plots come mainly from the territory of Saint-Aubin, the birthplace of the Roux family, as well as from the village of Ebaty, all situated on the Côté de Puligny-Montrachet side. Each plot planted at 10,000 vines per hectare gives a yield of around 55 hectolitres. The clay-limestone soils and the south-east exposure enable us to obtain grapes of a beautiful maturity as well as a nice freshness.
