Fruity and well-rounded
The nose is open and rich, offering aromas of roasted plums and wild blackberries, with a touch of grenadine and a floral hint of cherry.
The attack is velvety and satiny, with long, elegant tannins that are full of finesse.
The character is asserted on the red fruit coulis, accompanied by notes of black pepper and a light touch of liquorice stick.

Features
Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.
Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

The vines exposed to the full south benefit from warming up earlier than others, allowing them to achieve a beautiful maturity. This cuvée can only be created in great vintages, requiring a perfect balance.
Natural grass cover is used, and the soil work includes plowing and hilltopping to improve aeration.
Manual harvesting is followed by a sorting table at the reception at the winery.
Fermentation takes place in wooden vats, with very light pumping over just to moisten the cap, followed by a maceration of 18 to 22 days depending on the vintage.
Malolactic fermentation occurs in 100 hl wooden vats from Stoeckinger. The wine is then aged for 12 months in 228-liter barrels and round casks from Stoeckinger.
