Their aim? To help the grapes reach optimum ripeness so as to extract their quintessence.
 

Domain and appellation

  • Vinification
    Maceration without added SO₂ for 15 days.

    Temperature controlled at the start of fermentation: 20°C with regular pumping over.

     

    At the end of maceration, the temperature is raised to 26°C for punching down, promoting extraction of the material.

     

    Light sulphiting at the end of malolactic fermentation, Final adjustment at bottling to ensure the wine's stability and balance.

     

    Soils
    The vines are planted on shallow sandstone soils, crossed by veins of clay, which bring minerality, tension and finesse to the wine's expression.
