Our oenologists' opinion

Powerful bouquet

The nose is frank and expressive, revealing a beautiful bouquet with notes of fresh leather, truffle and cocoa.

The attack is supple, carried by freshness and a slight hint of menthol, in harmonious balance.

The palate is frank and distinctive, stretching out with a clear finish on the aromatic bouquet and herbs, underscored by a touch of mocha.

The persistent finish expresses roasted black fruits, bringing depth and elegance.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • DOMAINE FAIVELEY

Founded in 1825 in Nuits-Saint-Georges in the heart of Burgundy's wine-growing region, Domaine Faiveley owns more than 120 hectares of vineyards.

The aim of Eve Faiveley and Erwan Faiveley, the 7th generation, is to reveal the greatest terroirs of Burgundy in a style that combines power, finesse and elegance. The grapes are cut and sorted by hand.

Daily punching down is carried out to extract colour, tannins and aromas from the grape skins. After 19 days of vatting, alcoholic fermentation is complete.

The free-run wine is drained by gravity, while slow and gentle pressing of the marc produces a press wine of great purity. For 14 months, our wines are aged in French oak barrels (20 to 30% of which are new) selected for their fine grain and moderate toasting. The end of the ageing process is carried out in vats for 2 months.
