Our oenologists' opinion

Powerful bouquet

The nose is open, frank and fairly complex, with notes of nutmeg, camphor and toasted wood.

The attack is supple, bringing tension and finesse, with good balance and a lovely, slightly sweet envelope.

The finish is sapid, mineral and fruity, highlighting morello cherry aromas and notes of sweet spices, with a hint of peony.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • ALBERT BICHOT

The first traces of the Bichot family date back to 1214. By 1350, it had put down roots in Burgundy, in its fiefdom of Châteauneuf-en-Auxois.

The family coat of arms has remained unchanged ever since, as has their emblematic symbol: the deer.

In 1831, Bernard Bichot founded a trading house in Monthélie bearing his name.

His son, Hippolyte, succeeded him and acquired the first vines in Volnay, already convinced of the importance of controlling the upstream end of the wine chain.

His own son, Albert Bichot (Ist of the name), gave new impetus to the family business at the end of the XIXᵉ century, and set it up permanently in Beaune in 1912.
