Fruity and well-rounded

The nose is open and frank, revealing notes of plum, dark chocolate and roasted nuts.

 

On the palate, the attack is supple and fruity, with fairly firm tannins that need to be softened.

 

The balance is moderate, revealing a little black fruit character and hints of roasting.

 

The finish is acidic, fleshy and clean, with a little persistence.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

    A typical Bordeaux grape variety, Merlot thrives in the Mediterranean climate of Pays d'Oc, allowing it to showcase its fleshy and fruity character. Maison Castel selects the best plots from a Terra Vitis certified partner in the Aude department.

     

    The Minervois region, with its cool nights, allows for later ripening, adding tension and freshness to this cuvée. The traditional winemaking process follows a precise protocol; maceration and gentle extraction over 4 to 5 weeks ensure the best expression of the grape.

     

    After malolactic fermentation, aging refines the tannins and enhances the aromatic complexity. The result is an elegant wine that combines varietal character with minerality.
