Fruity and well-rounded

A dark, clear and brilliant wine, with an intense black colour and violet hues.

 

The nose is initially quite closed, with a slight hint of reduction, before opening up to reveal notes of sweet spices, black pepper and stewed black fruits, with a delicate floral touch of violet.

 

The attack is supple, underpinned by a fine balance.

The supple, silky tannins lend a rich, indulgent quality.

 

On the palate, it displays a distinctive character marked by spices and black pepper, with a lovely, enveloping texture and fullness.

 

The finish is long, with a full-bodied conclusion enlivened by a subtle hint of chilli, which adds a lively touch to the whole.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Tannins ? Coming from stems, grape pips and their storage barrels, the tannin gives structure to red wines only.

Domain and appellation

  • CAVE DE TAIN

    Terroir: a wide diversity of soils: clay-limestone and sandy soils in the St Donat area, alluvial soils in Tain, and granite soils in Tournon.

     

    Vinification: 100% destemmed harvest. Fermentation without sulphites in stainless steel tanks at 26–28°C. Regular pump-overs (once or twice a day) for a gentle extraction of tannins and colour compounds. Short post-fermentation maceration (10 days), followed by regular tastings to determine the draining date.

     

    Ageing: In tanks to preserve the purity and freshness of the fruit. No SO₂ added throughout vinification or ageing.
