Our oenologists' opinion

Fruity and crisp

The nose is straightforward and distinctive, revealing notes of citrus and exotic fruit, followed by an iodised minerality, which adds a touch of gourmet freshness.

The attack is taut, supported by fine balance and a well-dosed CO₂, to be preserved for its dynamism.

The palate comes alive with aromas of lemon juice, pineapple and grapefruit, offering a crisp, easy character.

The wine lingers for a medium length, giving way to a sapid finish, where freshness and greediness are delicately expressed.

Features

Body ? The body is the way a wine feels inside the mouth. Several factors, such as the alcohol content and the presence of tannins, contribute to the feel of the wine.

Freshness ? The freshness of a wine is defined by its level of acidity. Unlike rounded wines, fresh wines are easy to drink, and are more lively. Acidity plays a necessary part in a wine's structure.

Aging ? All wines do not have the same aging potential. Some are supposed to be consumed at a young age while others must be kept for longer periods of time.

Domain and appellation

  • CHEVAL NOIR

Made from a blend of wines from different partner vineyards, Cheval Noir Bordeaux Blanc reflects the expertise and skills of our oenologists.

Extensive research has been carried out in the Bordeaux vineyards to identify the terroirs most conducive to optimal ripeness of the Sauvignon Blanc grape variety, which makes up the majority of this wine. Sémillon adds roundness and complexity.

    Vinification and ageing :
The grapes are harvested ‘early’ to preserve the wine's freshness.

Vinification is designed to bring out the rich aromas of Sauvignon Blanc to the full.

Skin maceration and low-temperature fermentation optimise the extraction of aromas.

Ageing on fine lees, with stirring, enhances the wine's balance and finesse, while giving it structure and length, and intensifying the aromas obtained.
