From knights of the Hundred Years' War to philosophers of the Enlightenment, this ancient seigneury has seen its share of men of strong character. Remnants of history, the wines of Château Olivier have been classified as grands crus since 1953.
Terroir: Covering 60 hectares, this vineyard is planted on gravelly soil with a clay-limestone subsoil.
Viticulture: The vines are 20 years old (red) and 30 years old (white). They are pruned using the single and double Guyot methods. The grapes are harvested manually, in small crates, with selective sorting at the vineyard and then in the cellar.
Vinification: Fermentation takes place in barrels (30% new wood). The wine is then aged for 10 months with regular stirring. -
